Venison Hot Dogs

10 lbs ground venison
15 lbs ground pork butt
1 oz cure (Heller Modern Cure or Morton Sugar Cure)
10 oz salt
12 oz white sugar
1 oz white pepper
1/4 oz all spice
1/4 oz celery powder
1/8 oz onion powder
1 oz paprika
mix in one quart water

Stuff in sheep casings.  Boil for 15 minutes and then smoke for 15 minutes.
