5 lbs Pork Butt ( or 2½ lbs pofk & 2½ lbs venison)

1 Cup Butter Milk

2 Tbls Salt

2 tsp Mace

2 tsp White Pepper

2 tsp nutmeg

½ tsp Ground Ginger

Grind the meat through the coarse plate.  Combine all the ingredients and mix well with the meat.  Grind the seasoned meat through the mecium plate.  Stuff in hog casings or make patties.
